This is such a easy, super-filling, crowd-pleaser. I love that I can make it the night before and the leftovers keep super well. I'm always shocked at how it isn't mushy or soggy like you would imagine.

Puerto Rican Pink Beans

Heat 
• 1 Tbs oil 

Add 
• 1 cube sofrito 

Add 
• 1 can pink bean 
• 1/2 can tomato sauce 
• 1 pkg Sazon 

Simmer 10-15 mins

Taste better the next day.

Pressure cooker Puerto Rican Pink beans...with a Brazilian twist

Puerto Rican beans and rice!
  1. 1 pound dry pink beans (sorted and rinsed)
  2. 4 slices bacon (or a whole pound of bacon) diced
  3. 1 small-medium onion, diced
  4. 5-6 cloves garlic, pressed or minced
  5. 4 cups vegetable broth (can use chicken or beef, or even water instead)
  6. 1 cup water (more if desired, for "soupier" beans)
  7. 1 small can tomato sauce
  8. 2 packages sazon seasoning
  9. 4 sofito frozen cubes

in your pressure cooker saute bacon when almost done add chopped onion and garlic let cook for 3 more minutes. 
add the rest of the ingredients.
put lid on and place valve on closed and set pressure cooker on 60 minutes and let cook. Quick release the pressure cooker. Test beans for tenderness. If it needs more time, cook longer.  Serve over cooked rice

    Quiche Lorraine

    This is the recipe that I made when the kids were little ..... I really love it.

    1 pie crust
    1 1/2 cups grated Swiss cheese (or what ever you have on hand)
    1 1/2 cups whipping cream
    1/2 teaspoon salt
    Pinch nutmeg
    1/2 pound bacon chopped (you can add chopped ham, chorizo or what ever meat you like)
    1/4 cup finely chopped onion
    3 eggs, beaten
    1/4 teaspoon pepper
    Partially bake pie shell (7 minutes). Cook bacon and crumble into pie shell. Cook onion and mix with 1/2 cup of the cheese and sprinkle on top of bacon. Combine remaining cheese with cream, eggs, salt, pepper and nutmeg. Mix and pour into shell. Bake 425 degrees for 25 minutes or until set. Leftovers heat up well in the micro wave.

    The Best Pizza Dough for Grilling

    This recipe looks long but it isn't there is instructions on how to freeze the dough and how to freeze a topped pizza.

    Makes 8 small pizzas
    1 2/3 cups water
    1 to 2 teaspoons active dry or instant yeast
    1/4 cup olive oil
    5 cups all-purpose flour
    2 teaspoons salt
    If you want to use the pizza dough that same day, use 2 teaspoons yeast. If you are going to let the dough rise overnight, use 1 teaspoon yeast.
    Mix the water and yeast together in the bowl of a stand mixer or a large mixing bowl. Let stand for a few minutes until the yeast is dissolved. Stir the oil into the yeast mixture, then add the flour and salt. Mix with a spatula until a shaggy, floury dough is formed.
    Knead the dough on low speed with a dough hook for 5 to 7 minutes, or knead by hand on the counter for 6 to 8 minutes. When kneaded, the dough should form a smooth ball, feel smooth to the touch, and spring slowly back when poked.
    Use a pastry scraper or knife to cut the dough into 8 lumps. Grease a baking pan lightly with olive oil or baking spray. Place the dough lumps in the pan and turn them over so they are coated with oil. Cover the pan with plastic wrap or a damp kitchen towel.

    To Make Pizza the Same Day

    Let the dough rise at room temperature for 1 to 1 1/2 hours, or until it has doubled in bulk.
    At this point the dough can be used immediately, or refrigerated or frozen for later use.
    → How long the dough lasts in the fridge: The dough can be refrigerated for up to 3 days. After that it should be cooked or frozen.

    To Make Pizza the Next Day (or Later)

    If you don't need the dough until the next day, place the covered pan immediately in the refrigerator and let it rise slowly overnight or up to 24 hours.
    Before making the pizza, remove the dough from the refrigerator and let it sit at room temperature for at least 1 hour.
    You can also of course remove just one or two balls of dough and return the remaining dough to the fridge. If removing just part of the dough, prepare a baking sheet or countertop surface by greasing lightly with oil or baking spray. Place the dough balls on top, then cover loosely with plastic wrap or a damp towel while they rise.

    To Grill the Pizza

    Preheat your gas grill with all the burners on high 10 to 15 minutes before you plan to cook. (Alternatively, start a charcoal grill.) Once heated, turn off or lower half the burners, creating an area of direct heat and an area of indirect heat. (Alternatively, bank a charcoal grill to create areas of direct and indirect heat.) Set up a workspace near the grill with space for shaping the pizza and bowls with sauce and toppings.
    Working with one piece at a time, pull and stretch a dough ball in your hands into a round. Once it becomes large, drape it over your fists to continue stretching it into a large, thin round. If it feels more comfortable, you can also do this on a greased work surface.
    Flip the shaped pizza onto the grill over direct heat. Close the grill. Let the pizza grill until the bottom is just barely cooked and shows char marks, 1 to 3 minutes. Every grill is different, and depending on yours and how long you preheated it, this time could vary.
    Use tongs to flip the pizza over and move it to the indirect heat. Quickly spread it with sauce and spread a thin layer of toppings over top. (Don't over-top the pizza as this will interfere with it cooking quickly and completely.) Close the grill and cook until the toppings are warmed through and the cheese is melted, another 2 to 3 minutes. Again, time on your grill may vary. Use your sense of smell; if the pizza smells like it's scorching, open the grill and rotate the pizza into a cooler spot.
    Use tongs or a large spatula to slide the finished pizza onto a cutting board. Cut the pizza into slices and serve. Repeat with the remaining pieces of dough; as you get into a rhythm, you can start a second pizza over direct heat while the first pizza is finishing over direct heat.
    Freezing Dough
    You can freeze any kind of pizza dough in any quantity — just let it fully rise before you freeze it and then divide it into pieces portioned for single pizzas. The dough can be frozen for up to three months and just needs to be thawed in the fridge overnight before you use it!

    How to Make Homemade Frozen Pizza

    Makes one large pizza or two individual pizzas

    What You Need

    Ingredients
    1 pound pizza dough, store-bought or homemade
    1/2 to 1 cup sauce: tomato sauce or other spread 
    2 to 3 cups other toppings: sautéed onions, sautéed mushrooms, pepperoni, cooked sausage, cooked bacon, diced peppers, leftover veggies, or any other favorite toppings 
    1 to 2 cups (8 to 16 ounces) cheese, shredded or sliced: mozzarella, monterey jack, provolone, fontina, or any other favorite
    Equipment
    Parchment paper
    Rolling pin
    Baking stone (or baking sheet)
    Plastic wrap
    Aluminum foil

    Instructions

    1. Pre-heat the oven to 450°F: Place a pizza stone or baking sheet on a middle rack in the oven as it heats.
    2. Roll out the pizza rounds: Divide the pizza dough in half to make two individual pizzas, if desired. Place the ball of dough in the middle of a piece of parchment paper. Roll it out to your preferred thinness. If the dough starts to shrink back and crinkle the paper, let it rest for a few minutes and then try rolling it out again. If making two individual pizzas, repeat with the second round of dough.
    3. Par-bake the pizza rounds: Slide the pizza rounds on the parchment sheets onto the pizza stone or baking sheet in the oven. Bake for 3-5 minutes until the rounds are puffy and dry on the top, but still very pale.
    4. Let the pizza rounds cool completely: Remove the parchment from beneath the pizza rounds and let them cool completely on a wire rack.
    5. Top the pizzas: When cool, top the rounds as you would if you were going to bake them right away: spread some sauce on the pizzas, add toppings, and sprinkle cheese over the top. Note: pizza rounds can also be frozen un-topped.
    6. Freeze the pizzas: Place the pizzas on a baking sheet and freeze, uncovered, until solid, about 3 hours.
    7. Wrap the pizzas in plastic wrap and aluminum foil: Once frozen, remove the pizzas from the freezer and wrap them first in plastic wrap. Write the pizza toppings on a piece of masking tape and stick the label to the plastic wrap. Then, wrap the pizzas in a layer of aluminum foil. The double layer protects the pizzas from drying out in the freezer.
    8. Freeze for pizzas for up to three months.
    9. Bake the frozen pizzas: When ready to eat eat the pizzas, preheat the oven to 550°F (or the temperature at which you normally cook your pizzas). If you have a baking stone, place it in the oven as it heats; frozen pizzas can also be baked on the foil used to wrap them. When the oven has heated, unwrap the pizzas, discard the plastic wrap, and slide into the oven. Bake for 8-10 minutes, until the crust is dark brown and the cheese in the center of the pizza is bubbly. Eat immediately.

    Exquisite Pizza Sauce

    Ingredients

    • 1 (6 ounce) can tomato paste
    • 6 fluid ounces warm water (110 degrees F/45 degrees C)
    • 3 tablespoons grated Parmesan cheese
    • 1 teaspoon minced garlic
    • 2 tablespoons honey
    • 1 teaspoon anchovy paste (optional)
    • 3/4 teaspoon onion powder

     
    • 1/4 teaspoon dried oregano
    • 1/4 teaspoon dried marjoram
    • 1/4 teaspoon dried basil
    • 1/4 teaspoon ground black pepper
    • 1/8 teaspoon cayenne pepper
    • 1/8 teaspoon dried red pepper flakes
    • salt to taste

    Directions

    1. In a small bowl, combine tomato paste, water, Parmesan cheese, garlic, honey, anchovy paste, onion powder, oregano, marjoram, basil, ground black pepper, cayenne pepper, red pepper flakes and salt; mix together, breaking up any clumps of cheese.
    2. Sauce should sit for 30 minutes to blend flavors; spread over pizza dough and prepare pizza as desired.

    Spaghetti Sauce

    Spaghetti Sauce

    #10 can crushed tomatoes (106 oz.)
    1 onion, chopped
    2 Tablespoons olive oil or pam
    2 Tablespoons minced garlic
    3 cups water
    4 Tablespoons dried Basil
    2 Tablespoons Salt
    1/2 cup +2 Tablespoons sugar or splenda (I add less)

    Saute onion and garlic in oil when onions are translucent add tomatoes, water, basil, salt, and sugar or splenda simmer for 20 minutes or more. Makes 16 cups
    If you want to add meat just brown meat with the onion and garlic.

    Creamy Chipotle Chicken

    • 4 skinless, boneless chicken breast halves
    • 1/4 cup melted butter
    • salt and ground black pepper to taste
    • 2 cloves garlic, minced
    • 1 (10.75 ounce) can condensed cream of chicken soup
    • 1/2 cup chicken broth
    • 1 (8 ounce) package cream cheese, cut into cubes
    • 3 chipotle peppers in adobo sauce, minced
    • 1 tablespoon adobo sauce from chipotle peppers
    Place the chicken breasts into a slow cooker, brush with butter, and sprinkle with salt, pepper, and minced garlic. Pour in the cream of chicken soup and chicken broth, and add the cream cheese, peppers, and adobo sauce. Stir the mixture gently. Cover, set the cooker to Low, and cook for 6 hours.

    Serve over rice.

    Roberto's green chicken enchilada's (Rob Ashby)

    Roberto's Green Chicken Enchiladas
     This is Dad's cousin Bruce's sons Rob's recipe!
    First you need shredded chicken. I like to cook chicken breasts several hours in a crock pot. Season with garlic powder, garlic salt, and onion salt. Shreds easily with two forks. Another nice way is to buy a whole rotisserie chicken and remove all the meat and shred it.

    You will need corn tortillas. Prepare the tortillas one at a time by putting them in a small skillet with about 1/4 inch of oil on medium heat. The idea is to soften them, not fry them. Takes a few times to get the hang of this. Takes maybe 10 seconds or less for each one.

    The sauce is very simple.
    2 cans of Hatch Green Chile Enchilada sauce

    1 small can of Herdez Salsa Verde (Other brands will work fine, those are just what I like)

     Mix together and heat in a sauce pan.
    Now... turn the broiler on in your oven. Find a glass plate. Put tortilla on plate and add chicken then fold in half. Make sure you make 2 or 3 on each plate. You will want more than one!
    Ladle some sauce over the enchiladas then top with shredded cheese. Put the plate in the oven under the broiler just long enough to melt the cheese. Plate will be hot!

    Easy Spaghetti and Meatballs

    Ingredients
    For the meatballs:
    1 pound ground pork
    1 pound ground beef
    1 1/4 cups fresh bread crumbs
    2 tablespoons chopped fresh parsley
    1/2 cup freshly grated Parmesan cheese
    2 teaspoons kosher salt
    1/2 teaspoon freshly ground black pepper
    1 teaspoon onion powder
    1 large egg, beaten
    1/2 cup warm water
    Vegetable oil
    Olive oil

    For the sauce:
    1 tablespoon olive oil
    1 cup chopped onion 
    2 cloves garlic, minced
    1/2 teaspoon red pepper flakes
    pinch of sugar
    1/2 cup red wine (I used grape juice)
     14 ounce can tomato puree
    1 14 ounce can diced tomatoes
    1 tablespoon fresh parsley, chopped
    1 1/2 teaspoons kosher salt
    1/2 teaspoon freshly ground black pepper
    For serving:
    1 1/2 pounds spaghetti noodles
    Freshly grated Parmesan


    Instructions
    1.       To make the meatballs, place the ground meats, bread crumbs, parsley, Parmesan, salt, pepper, onion powder, egg, and 1/2 cup warm water in a large bowl. Mix lightly with a fork. Use your hands to lightly form the meatballs. Mine were around 2 inches, but you can make them smaller or larger based on your personal preference.
    2.      Place meatballs in the refrigerator for at least one hour to rest. Remove from fridge 30 minutes prior to cooking to allow them to reach room temperature.
    3.      To cook the meatballs, pour equal parts olive oil and vegetable oil in a deep frying pan to a depth of 1/4 inch. Brown the meatballs in batches, turning carefully with a fork or spatula to brown all sides. Remove to a paper towel lined plate to drain. When all of the meatballs are browned, discard the oil but do not clean the pan.
    4.      To make the sauce, heat the olive oil in the same pan. Saute the onions until translucent and soft, about 10 minutes. Add the garlic and red pepper flakes and cook for 1 minute more. Turn the heat to high and add the wine, using it to deglaze the pan. Continue cooking the wine on high heat for 3 minutes, until most of the liquid has evaporated. Stir in the tomato puree, diced tomatoes, sugar, salt, pepper, and parsley.
    5.      Return the meatballs to the sauce, cover, and simmer for 25 to 30 minutes until the meatballs are cooked through.
    6.      Serve over hot, cooked spaghetti and sprinkle with Parmesan.
    7.      (This is delicious right after being made, but the second day it is even better!)

    Zucchini Pot Pie

    Adapted from Skinny Taste.

    4 small zucchinis sliced thin (I used a mandolin)
    green onions
    4 slices bacon (4 points plus)
    4 Tbs Parmesan (2 points plus)
    1/2 c. milk (1 point plus)
    1/2 c. flour (6 points plus)
    1 tsp. baking powder
    2 eggs (4 points)
    garlic salt
    pepper

    Put the zucchini in a greased pie pan, top with green onions, bacon, and Parmesan. Mix milk, flour, baking powder, eggs, garlic salt, and pepper in a bowl. Pour mixture over zucchini. Bake at 400 for 35mins. or until topping is golden.

    Spinach Burgers

    We really like these. You won't be fooling anyone trying to pretend like they taste like hamburger, but they definitely satisfy a burger craving.

    Approx. 10oz pkg frozen spinach, thawed and chopped or 10oz fresh spinach, blanched, drained, and chopped
    1/2 onion, sautéd
    green pepper, sautéd
    3 egg whites (1 point plus)
    2 green onions, chopped
    1/2 cup reduced-fat mozzarella (4 points plus)
    1/2 cup Panko (4 points plus)
    garlic salt
    pepper
    crushed red pepper (optional)

    Mix all the ingredients in a bowl. Divide and form 4 large patties. Cook on a non-stick pan over med-high heat for approx 5 mins per side or until golden. Serve on buns and dress like hamburger.

    2-3 Points/patty

    Black Bean Burgers

    adapted from Annie's Eats.

    Yield: 6 burgers

    ¾ cup panko
    2 (15 oz.) cans black beans, drained and rinsed, divided
    2 large eggs
    1 red bell pepper, stemmed, seeded and finely diced
    ¼ cup fresh cilantro, minced
    1 green onion, minced
    Seasonings to taste

    TOTAL PointsPlus: 4/each

    Place a medium skillet over medium-high heat.  Toast the panko, stirring frequently, until light golden brown.  Remove from the heat and let cool to room temperature.

    Place 2½ cups of the beans in a large bowl and mash with a potato masher or a fork until mostly smooth.  Add the egg mixture, seasonings, toasted panko, the remaining ½ cup beans, bell pepper, cilantro and green onion to the bowl with the mashed beans.  Stir together until evenly combined.

    Divide the mixture into 6 equal portions, about ½ cup each.  Lightly pack into 1-inch thick patties.  (At this point the patties can be covered tightly with plastic wrap and refrigerated for up to 24 hours before cooking.)  

    Heat 1 tablespoon of the oil in a large skillet over medium heat until shimmering.  Carefully lay patties in the skillet and cook until well browned on both sides, about 8-10 minutes total.  Serve warm.

    Spaghetti alla Carbonara

    4 egg yolks + 1 egg
    1/2 cup grated Pecorino Roman cheese (I often use parmesan, cause that is what I usally have on hand)
    5 1/2 oz of diced guanciale or a good quality smoky bacon (I always use bacon cause that is what I have on hand)
    12 oz of spaghetti
    2 tablespoons of extra virgin olive oil
    Freshly ground black pepper

    The first thing you will need to do is to boil you spaghetti in lightly salted water at a steady boil. Keep the salt low because both the meat and the cheese are already salty. Saute the meat in a thin layer of olive oil. Once the meat is golden and crispy, take it off the heat and leave it to cool for a few minutes.

    In a bowl, put the 4 egg yolks plus 1 whole egg. Whisk them together until completely mixed. Add the cheese, mix it in well, add the pepper. If the sauce seems too dense. you can thin it by adding some of the water from the pasta a little bit at a time. Now add the cooled meat. Mix sauce ingredients together. Drain the pasta, leave a little moist--don't get rid of all the water. This will help to thin out the sauce so it coats all the pasta. Now, mix it together, and once the pasta is coated, serve it right away.

    Andrea Chun's Chinese Pork Ribs- Hawaiian Style

    3 lbs pork ribs
    4 cloves of garlic 9or more- depending how much your family loves garlic)
    1/2 c. brown sugar
    1/2 c. soy sauce
    1/4 c. vinegar (Andrea uses apple cider vinegar)
    1 cup water
    1 can pineapple tidbits (or slices, cut into pieces)+ juice
    frozen peas
    cornstarch

    Cut meat into individual ribs. Brown the garlic and the meat. In separate bowl add water, vinegar, pineapple juice, soy sauce and brown sugar and mix well until sugar is all dissolved. Pour over browned ribs and cook in pressure cooker for about 20- 30 minutes or in regular pot for several hours on low heat. When it's all done the meat should fall of the bone or at least slide off of it very easily. If it doesn't it has not cooked long enough yet. Andrea takes the meat off the bones before serving. After all bones are off add frozen peas and the pineapple(which Andrea doesn't add the pineapple she serves it on the side cause her children don't like it). Then you thicken the sauce with some corn starch and water. That is it. Pretty easy but usually a hit.

    Tripled recipe for 12 people and had maybe 2 servings left. Also Andrea buys her ribs at costco (pork tenderloin baby back ribs) I have used boneless pork ribs (much cheaper) and they are good.

    Mrs. Carroll's Cha Cha Chili

    MRS. CARROLL’S CHA CHA CHILI
    1 tbsp. olive oil
    1 lb. ground sirloin
    1 medium yellow onion, chopped
    2 jalapeno peppers, chopped {optional…I used ‘em, of course!}
    2 cloves of garlic, finely chopped {pressed}
    1 tbsp. chili powder
    1 tsp. ground cumin
    1 {15 oz.} can of black beans
    1 {15 oz.} can of pinto beans
    1 {10 oz.} can of Rotel {we used mild, but next time we’ll use HOT!}
    Salt & pepper to taste
    Shredded cheddar or monterrey jack cheese
    Fritos
    In a large pot, heat olive oil over medium high heat. Add beef and cook for 7-10 minutes. Add onion, garlic, chili powder, cumin, & jalapenos and cook over medium low heat for 5 minutes. Add beans {DON’T drain!} and Rotel. Bring to a simmer and cook for 25-30 minutes, covered {stirring often}. Remove from heat and season with salt and pepper. Top with cheese and Fritos and ENJOY!! I promise you will!!!

    Homemade Chicken Fettuccine (Kevin's Favorite)

    8 ounces fettuccini pasta
    2 tablespoons butter
    3 skinless, boneless chicken breast halves - cut into chunks
    8 ounces mushrooms, sliced
    1 teaspoon garlic salt
    1/8 teaspoon ground black pepper
    1 1/2 cups heavy cream
    1/4 cup grated Parmesan cheese

    Directions
    1.Bring a large pot of lightly salted water to a boil. Add fettuccine and cook for 8 to 10 minutes or until al dente; drain.
    2.In a large skillet, brown chicken and mushrooms in butter until chicken is cooked through. Season with garlic salt and pepper. Add whipping cream and cook until thick, stirring constantly. Add parmesan cheese when at desired consistency. Serve over noodles.

    Mar-a-Lago Turkey Burgers

    Mar-a-Lago Turkey Burgers

    These are sooooo delishious


    *Note this recipe makes 8 half-pound burgers. A half-pound burger is very large! You can easily half the recipe and get 6 good sized burgers. I cut the recipe down to work with one 20 oz package of turkey and it yielded 6 large sliders.


    2 tablespoons canola oil (I used butter)
    1/2 C finely chopped celery
    3 Granny Smith Apples, peeled and diced (I grated my apples)
    1/4 cup thinly sliced green onions
    4 lbs ground turkey breast (I used 85/15 ground turkey)
    2 tablespoons kosher salt
    1 tablespoon black pepper
    2 teaspoons tabasco sauce
    1 lemon, juiced and zested
    1/2 bunch parsley, chopped
    1/4 cup Major Grey’s Chutney, pureed (I think pureeing is unnecessary)

    Saute the scallions, celery and apples in the canola oil until tender. Let cool. Place the ground turkey in a large mixing bowl. Add sauteed items and the remaining ingredients. Shape into eight 8-ounce burgers. Refrigerate for 2 hours.

    Season the turkey burgers with salt and pepper. Place on preheated, lightly oiled grill. Grill each side for 7 minutes until meat is thoroughly cooked. Let sit for 5 minutes. Serve on your favorite toasted bread, pita, or hamburger bun.

    *The recipe calls for a side of this chutney to spread on top of the burgers. I skipped that step and just used straight Major Grey’s from the jar. I make an easy spread using a 50/50 mix of Major Grey’s Chutney and Mayo. Play around with it and you might like just plain chutney instead of mayo, or mostly mayo with a touch of chutney. I like it 50/50. I also topped it with a crisp lettuce leaf and a slice of juicy tomato.

    Cowboy Charro Beans (Frijoles Charros con Tocino Y Chorizo)

    Serves 6
    these are some yummy beans!

    6 oz sliced uncooked bacon, chopped
    8 oz fresh, uncooked Mexican chorizo, casings removed, chopped
    1/2 cup white onion, chopped
    1 jalapeno pepper (seeded if desired), finely chopped, more or less to taste
    1/2 lb roma tomatoes, about 2 to 3 tomatoes, chopped
    1 tsp. kosher or sea salt, plus more as needed
    5 cups cooked pinto beans and their cooking liquid (or substitute with black or Peruvian beans)

    Cook the bacon in a large, deep skillet over medium-high heat for 3 to 4 minutes,untill it is lightly browned and starting to crisp. Add the chopped chorizo; cook for 4 to 5 minutes, until it starts to brown and crisp. As it cooks, use a wooden spoon to break it into smaller pieces.

    Add the chopped onion and jalapeno; mix well and cook for 1 or 2 more minutes, letting them soften a bit. Add the tomatoes and mix well; cook for 3 to 4 minutes, stirring, until the tomatoes soften and appear mushy.

    Add the cooked beans and their cooking liquid; mix well and reduce the heat to medium. Cook for 8 to 10 minutes, until the beans are moist but not soupy. Add a bit more water if needed. Taste, and add more salt to your taste. Serve hot.

    Crispy Chicken Taquitos

    4 to 5 servings

    3 to 4 pieces Rotiseree Chicken, deboned, deskinned and shredded
    Pepper Jack Cheese, shredded
    14-16 corn tortillas
    vegetable oil
    salt, pepper garlic powder

    Mix together shredded chicken and cheese. Season with salt, pepper and garlic powder. Soften tortillas in warm oil. Place small amount of chicken mixture on to each tortilla and roll cigar style (if needed secure with tooth pick). Fry in oil till crispy. Serve with salsa and gucomole.
